In Tremors 2, it is mentioned that Graboids predate all known life on our planet.
Given that they perioidically emerge from the eggs every so often, is it likely they encountered dinosaurs at one point in prehistory?
Mind you, they'd be at a distinct disadvantage, since the larger sauropods and therapods would easily be a match for a Graboid.
So their diet would have to consist of smaller dinosaurs.
And when they entered the next stage of their lifecycle, they'd be even more vulnerable, since a Shrieker is a lot smaller then a Graboid. The only way they could survive is as a carrion scavenger.
The 3rd stage might have more survivability, since they could take to the air. But their diet would be limited further, since a Assblaster's is not as formidible a predator as a Shrieker, because their heads are not as suited to killing prey as a Shriekers or Graboid's.

Well, like you said, the Graboid would mostly focus on smaller dinosaurs. Given how smart they are and how fast they learn they'd learn fairly quickly to avoid the larger dinosaurs.
Shriekers too would probably have picked off the smaller dinosaurs, but the smaller dinosaurs were probably faster than the Shriekers, so the Shriekers weren't able to get enough food to reproduce to the point of overthrowing dinosaurs as the dominant species on the planet.
Once they morphed into ABs, food wouldn't really be much of a worry. They'd probably kill off any potential threats that they could handle, and if they proved outmatched they would simply fly off, lat their eggs, and begin the cycle all over again.

I would imagine that the Graboid would be the biggest threat to a dinosaur or a pack of shriekers would also be rather deadly. A graboid, being underground, could sneak up on a triceratops and and lunge from directly beneath it and do some serious damage to the triceratops's underside. Also a pack of shriekers might hunt like velociraptors do in the movie Jurassic Park.
